A commitment to longevity

The winds of change are blowing, the climate is evolving, the earth is alive and the vine is striving to adapt to this new reality, but it is not alone in this struggle: we have relearned old and often forgotten techniques such as GUYOT-POUSSARD pruning, a method that preserves the flow of sap, avoiding mutilation of the plant as much as possible. This method has been used in our vineyards for 10 years now.

When we talk about longevity, how can we not mention that of the estate itself? Ever since he was a child, Pierre followed his father into the cellar, walked through the vines during the harvest. At the dawn of his 20th year, after obtaining a BTS in Viticulture and Oenology, he joined the family business, preparing himself to take over the reins of the estate one day.

Soils as an obsession

Wine is all about the vines. Almost everything happens in the soil of our four-hectare estate, where the vines drink in the sun, the rain and the elements available to them to produce grapes that are balanced, full of flavour and aroma.

The recent vagaries of the climate are constantly pushing us to evolve and question our growing practices. Our soils are the key, and that’s why we attach so much importance to them.

We try to return to natural systems by opting for less intrusive methods, limiting ploughing and favouring plant cover in order to restore resilience to the vine-soil-plant system.

Our practices are also aimed at sequestering as much carbon as possible, returning it to the soil, allowing our soils to build up water reserves and facilitating the assimilation of the nutrients needed by the plant to produce high-quality grapes.

Beans, peas, vetch, spelt, oats and bluegrass are now sown between the rows of our vines. A veritable ecosystem lives here, with plants, soil and wildlife all contributing to the long-term survival of our vines.

A great terroir is a terroir capable of sublimating a raw material, and every day we take care to preserve this essence, keeping yields under control and discerning according to our plots.

Arnaud will tirelessly seek out this ideal fruit with its original purity, in order to rediscover the harmony between the vine and its environment.

Aromatic purity is the Holy Grail

We are constantly striving for aromatic purity, brilliance and balance, in a never-ending quest for the perfect gesture and an absolutely unique sense of detail.

This ideal of purity is our Holy Grail. Driven solely by the desire to do better in order to reveal this exceptional terroir, we have chosen to shake up traditions, some would say, but we remain convinced that we are moving in the right direction.
During vinification, the pressings are gentler and longer in order to refine the style. And the settling is tighter to capture the aromas of the fruit more accurately.
This is the work of a goldsmith on a daily basis, like an alchemist who tries and experiments, with the sole aim of reducing any exogenous aromatic influence that might alter the wine’s original taste.
Perceiving the woody touch as an exogenous aromatic and tactile contribution, we gradually abandoned wood in favour of glass carboys, and took part in the development of WINEGLOBE from 2017.
Following excellent results that enabled us to move forward in our relentless pursuit of purity, we embarked on this path with ever greater conviction. By 2022, 95% of our wines will have been vinified in WINEGLOBE. By 2023, only this container will be used for the vinification and ageing of our white wines and for the ageing of our red wines.

By dint of constant hard work, a never-ending quest for the perfect gesture, and an absolutely unique sense of detail, we are constantly seeking purity, brilliance and balance. Driven solely by the desire to reveal our terroirs, we have chosen to shake up traditions, some would say, but we remain convinced that we are making the right choice.

A family story

Arnaud ENTE, the grandson of a winegrower, has been immersed in the world of wine since childhood. Although he was destined for a career in science, life decided otherwise. Instead of taking care of people, he decided to take care of the vines by taking over the business from his father-in-law. Since then, we’ve come a long way!

Marie-Odile Ente, a winegrower’s daughter and above all an attentive wife and mother, looks after everything. Right from the start, she supported her husband, who left early and came home late. She has accompanied her son on the path of his passion. And every day she encourages these two men to move forward towards their common Grail.

Pierre ENTE, who fell into wine as a child, has always dreamed of becoming a winemaker. His parents wanted to see if this was a passing fancy. Although he already wanted to work on the estate, they encouraged him to study. When they saw how committed he was to his studies in viticulture and oenology and to the estate, they quickly realised that his path had been mapped out.

In the interests of quality, we sell our wines via a network of selected wine merchants and professionals. We do not sell to private individuals or receive guests at the estate.
